Fresh zucchini halves are scooped and filled with pizza sauce, mozzarella cheese and pepperoni, then baked to perfection. A delicious dinner and a great way to use extra zucchini.
Preheat the oven to 350 degrees. Prepare a 9x13 casserole dish with non-stick cooking spray.
Slice zucchini lengthwise. Use a spoon or melon baller to scoop out the middle of the zucchini. (Reserve for another recipe.) Place the zucchini boats in the casserole dish with the scooped side facing up.
Drizzle zucchini with olive oil. Season with salt and pepper, if desired. Place in the oven and bake for 5 to 8 minutes to soften.
Remove the zucchini from the oven and spoon about a tablespoon of pizza sauce into each well. Top with a pinch of Italian seasoning, garlic powder and a sprinkle of mozzarella cheese. Add pepperoni on top.
Bake for 20 to 30 minutes or until the cheese has melted and the edges bubble.
Sprinkle with grated Parmesan, if desired, and serve.
