In a stand mixer, combine the dry cake mix, oil, and eggs. Mix on medium speed for about two minutes until smooth. Add gel food coloring a few drops at a time while mixing until the desired green shade is reached.
Scoop the dough onto the prepared baking sheets, spacing them about two inches apart to allow for spreading. Bake for 10-12 minutes, until the edges are set and centers are no longer shiny.
Place a large red heart sprinkle in the upper right corner of each cookie immediately after removing it from the oven. Allow to cool for 5 minutes on the baking sheet before enjoying.
