2poundsbaby red or Yukon gold potatoescut into bite-sized pieces
1teaspoonblack pepper
1teaspoondried parsley
½cupvegetable oil
Salt to taste
Instructions
Place the potatoes in a large bowl and cover them with water. Allow to soak for 10 minutes, then drain and rinse the potatoes. Transfer to a paper towel lined plate to dry for 5 minutes
When ready to cook, heat the oil in a large skillet over medium heat.
When the oil is hot, add the potatoes. Season with pepper and parsley and stir to coat the potatoes in oil.
Cook over medium heat, stirring often, until the potatoes are tender and golden brown.
Remove the potatoes form the oil and transfer to a paper towel lined plate to drain. Season with salt before serving.
