Cut zucchini in half lengthwise and use a spoon or melon baller to scoop out the middle of the zucchini, creating a boat-like shape.
Drizzle the zucchini with olive oil and season with salt and pepper to taste. Place them in the oven and bake for 5 to 8 minutes to soften the zucchini slightly.
Spoon pizza sauce into each zucchini. Top with a sprinkle of Italian seasoning, garlic powder, and mozzarella cheese and add pepperoni or other desired toppings.
Bake the zucchini boats until the cheese has melted and the edges bubble.
