These raspberry brownie bombs are easy to make and combine rich chocolate with a burst of fruity flavor in the middle.

They’re fun to decorate and make a great treat for any occasion.

Ingredients

Ingredients: crumbled brownies, cream cheese, raspberries, Red melting chocolate, and semisweet chips.

Crumbled brownies: Homemade brownies give the best flavor, but store-bought or boxed mix brownies work just as well. Just make sure they’re fully cooled before crumbling.

Cream cheese, softened: Let the cream cheese come to room temperature for easy mixing. Avoid low-fat versions for the best texture.

How to Make

Place the balls on a parchment-lined tray and freeze for one hour to firm up.

Heat in 30-second intervals, stirring between each interval, until the chocolate is completely smooth.

Remove the brownie bombs from the freezer, dip each one into the melted chocolate, and place them back on the parchment-lined tray.

If you’re using sprinkles, add them immediately before the chocolate sets.

For red melting chocolate, microwave it in 30-second intervals until melted, then transfer it to a small Ziploc bag with the corner snipped off.

Ingredients

  • 3 cups crumbled brownies
  • 8 ounces cream cheese softened
  • 12 raspberries
  • 12 ounces semisweet chips
  • Red melting chocolate or sprinkles for décor

Instructions

  • In a large bowl using an electric mixer combine the brownies and the cream cheese until combined and smooth.
  • Separate the mix into 12 equal amounts and wrap each one around 1 raspberry carefully, rolling into a ball.
  • Place on a parchment lined tray.
  • Place in the freezer for 1 hour to chill.
  • In a microwave safe dish in 30 second intervals melt the chocolate chips until smooth and melted.
  • Dip each of the bombs into the chocolate and place back on the parchment lined tray.
  • If using sprinkles immediately sprinkle before the chocolate sets.
  • If using red melts, melt them in the microwave using the same method as above.
  • Place the melted red candy melts in a ziploc bag with the corner snipped off.
  • Drizzle the red chocolate all over the bombs.
  • Once the chocolate is set, serve!
