Raspberry Brownie Bombs
If you love chocolate and raspberries, this recipe is perfect for you.
These raspberry brownie bombs are easy to make and combine rich chocolate with a burst of fruity flavor in the middle.
They’re fun to decorate and make a great treat for any occasion.
Ingredients
Crumbled brownies: Homemade brownies give the best flavor, but store-bought or boxed mix brownies work just as well. Just make sure they’re fully cooled before crumbling.
Cream cheese, softened: Let the cream cheese come to room temperature for easy mixing. Avoid low-fat versions for the best texture.
Raspberries: Fresh raspberries are ideal for this recipe. Look for firm, ripe berries without any bruising.
Semisweet chocolate chips: Use good-quality chocolate for a smooth and rich coating. You can also use dark chocolate if you prefer a less sweet flavor.
Red melting chocolate or sprinkles for décor: Red melts are perfect for Valentine's Day or Christmas, but sprinkles are a quick and colorful alternative. Use what you have on hand or mix and match for fun designs.
How to Make
In a large bowl, use an electric mixer to combine the crumbled brownies and softened cream cheese until the mixture is smooth and well combined.
Divide the mixture into 12 equal portions, and gently wrap each portion around a raspberry, rolling it into a ball.
Place the balls on a parchment-lined tray and freeze for one hour to firm up.
While the brownie bombs are chilling, melt the semisweet chocolate chips in a microwave-safe dish.
Heat in 30-second intervals, stirring between each interval, until the chocolate is completely smooth.
Remove the brownie bombs from the freezer, dip each one into the melted chocolate, and place them back on the parchment-lined tray.
If you’re using sprinkles, add them immediately before the chocolate sets.
For red melting chocolate, microwave it in 30-second intervals until melted, then transfer it to a small Ziploc bag with the corner snipped off.
Drizzle the red chocolate over the brownie bombs.
Once the chocolate is fully set, your Raspberry Brownie Bombs are ready to serve!
Tips & Tricks
Make sure the cream cheese is fully softened for smoother mixing.
