Pineapple Casserole
Pineapple casserole isn't something that we see a lot in the Pacific NW. It's a Southern dish that tends to grace the tables during the holidays such as Easter, Thanksgiving, and Christmas.
It's also a popular dish for potlucks, family reunions or special occassions.
It's really good when paired with ham or any roasted meats.
It’s one of those dishes that sounds unusual but quickly becomes a favorite after the first taste!
Ingredients
Pineapple chunks: You can use fresh pineapple, but canned chunks are super convenient. Just make sure to drain them well!
Granulated sugar
All-purpose flour
Sharp cheddar cheese
Ritz crackers This makes a great buttery topping to the casserole.
Unsalted butter: Use unsalted butter.
How to Make
Preheat the oven to 350°F (175°C).
In a medium mixing bowl, combine the drained pineapple chunks, sugar, and flour, stirring until the pineapple is well-coated.
Once mixed, gently fold in the shredded sharp cheddar cheese.
Pour the pineapple and cheese mixture into a 9x13-inch baking dish, spreading it out evenly across the bottom.
In a separate bowl, mix the crushed Ritz crackers with the melted butter until the crackers are fully coated.
Sprinkle this buttery cracker mixture evenly over the top of the pineapple and cheese layer.
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
Once done, remove it from the oven and let it cool for a few minutes before serving.

Leftovers/Storage
If you end up with any leftovers, transfer the pineapple casserole to an airtight container or cover the dish with plastic wrap. Store in the fridge for up to 4-5 days.
