This amazing meatloaf with mushroom gravy is great for a family dinner. It's easy to make and perfect for your whole family to enjoy.

Meatloaf with Mushroom Gravy

If you love meatloaf and all the different ways you can make it such as Mexican meatloaf, Italian meatloaf, Cajun meatloaf, etc. This is a more traditional meatloaf recipe with delicious gravy over the top.

We love making meatloaf, especially during the fall when we're wanting something a bit more substantial and comforting.

This meatloaf has a rich, creamy mushroom gravy, that is delicious.

Ingredients for Meatloaf with Mushroom Gravy

Ingredients: salt, pepper, garlic, mushrooms, beef broth, heavy cream, eggs, butter, flour, thyme, oregano, breadcrumbs, onions, ground beef, Worcestershire sauce, and ketchup.

Ground beef: Choose an 80/20 blend for a good balance of flavor and moisture.

Breadcrumbs: Plain or Italian-seasoned can be used.

Onion: Finely chopped; can use yellow or white onions.

Fresh garlic

Eggs: Beaten; helps bind the meatloaf together.

Ketchup: Adds a hint of sweetness and tanginess to the meat mixture.

Worcestershire sauce: Provides a deep, umami flavor.

Thyme, oregano, salt, and pepper: A great blend of seasonings for this.

Mushrooms: Sliced; choose fresh mushrooms like cremini or button.

Butter: Unsalted; used for sautéing the mushrooms and making the roux.

All-purpose flour: For thickening the gravy.

Beef broth: You can use store bought or homemade.

How to Make Meatloaf with Mushroom Gravy

Preheat your oven to 350°F (175°C). Grease a casserole dish and set aside.

In a large mixing bowl, add the ground beef, breadcrumbs, chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper.

Use your hands to combine everything until it's mixed well. Make sure not to overmix so the meatloaf doesn't turn out tough.

Shape the meat mixture into a loaf and place it in your prepared dish.

Bake in the preheated oven for about 50-60 minutes, until the inside temperature reaches 160°F (71°C).

Once done, remove and let rest for a few minutes before cutting it.

While the meatloaf is cooking, you can make the mushroom gravy.

Melt the butter in a skillet over medium heat, then add the sliced mushrooms.

Cook until they are soft and a bit brown, which should take about 5-7 minutes.

Sprinkle the flour over the mushrooms and butter and keep stirring for another 2 minutes to make a roux.

Gradually add the beef broth while whisking to keep it smooth.

Add in the heavy cream and keep cooking the gravy until it gets thick enough, about 5-7 more minutes.

Add salt and pepper to taste.

When everything is ready, spoon about 1 cup of the mushroom gravy over the meatloaf and serve the rest of the gravy on the side. Enjoy!

Tips & Tricks to Make the Best Meatloaf with Mushroom Gravy

Here some tips for making this meatloaf:

Breadcrumb Substitute: If you don’t have breadcrumbs, you can use crushed crackers or oats as a substitute.

Mix Gently: Mix the ingredients just until combined to keep your meatloaf tender. Overmixing can make it tough.

Thermometer: Use a meat thermometer to check the temperature instead of guessing. It should reach 160°F (71°C).

Thicker Gravy: If your gravy is too thin, mix a little cornstarch with water and add it to the gravy. Stir until it thickens.

Sneak in Veggies: You can also add finely grated carrots or zucchini to the meat mixture.

How to Store Leftovers

If you end up with leftovers, let it cool to room temperature, then cover with plastic wrap or transfer to an airtight container.

The gravy can be placed in a separate container with a lid or covered with plastic wrap.

You can store these in the fridge for up to 4-5 days.
