Lemon Blondies

Lemon is super popular in my house and these lemon blondies are so delicious!

They are perfect for spring gatherings, summer picnics, or simply when you’re craving something light and citrusy.

If you love everything lemon as much as us, you'll love these lemon blondies.

Ingredients

Ingredients: powdered sugar, white chocolate chips, all-purpose flour, granulated sugar, lemon juice, baking powder, salt, lemon zest, eggs, vanilla extract, and melted butter.

Unsalted butter: I use unsalted butter.

Granulated sugar: Regular granulated sugar works best here for that classic sweetness.

Fresh lemon juice: Fresh squeezed lemon juice gives the best flavor. Bottled lemon juice can be used in a pinch.

Lemon zest: Make sure to zest the lemons before juicing them to get the most out of your fruit.

Large eggs: Pull out of the fridge about 30-60 minutes before starting to allow them to come to room temperature.

All-purpose flour: Make sure to spoon and level the flour when measuring to avoid using too much, which can make the blondies dense.

Baking powder: Make sure your baking powder is fresh for the best rise.

Salt

White chocolate chips: These are optional, but are delicious.

Powdered sugar: This is used for the lemon glaze.

Fresh lemon juice (for the glaze): Using fresh juice here again is key.

Lemon zest (for the glaze): Adding lemon zest to the glaze gives it extra flavor.

How to Make

Preheat the oven to 350°F (175°C) and prepare a 9x9 inch baking pan by greasing it and lining it with parchment paper, leaving some overhang for easy removal later.

In a large bowl, whisk together the melted butter and sugar until well combined.

Next, add the fresh lemon juice, lemon zest, and large eggs to the bowl, whisking until the mixture is smooth and well blended.

In a separate bowl, mix together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

If you’re using white chocolate chips, fold them into the batter at this stage for added sweetness.

Pour the batter into the prepared baking pan, spreading it evenly.

Bake in the preheated oven for 30 to 35 minutes, or until the edges turn golden and a toothpick inserted into the center comes out clean.

While the blondies are baking, prepare the lemon glaze by mixing the powdered sugar, fresh lemon juice, and lemon zest in a small bowl until smooth.

Once the blondies have finished baking, allow them to cool in the pan for about 10 minutes.

Drizzle the lemon glaze over the warm blondies.

Let them cool completely before cutting into squares.

Tips & Tricks

Here are some tips for making these lemon blondies:

Use a zester: A microplane zester makes it easy to get fine lemon zest without the bitter white pith.

Room temperature ingredients: Make sure your eggs are at room temperature for better mixing and a smoother batter.
