Ingredients
Jiffy Cornbread Mix: You can substitute with another cornbread mix if you want. Make sure to crumble the cornbread well.
Onion: Yellow or white onions are my go-to because theyโre milder than red onions, but you can use whichever you prefer.
Celery
Butter: The butter helps sautรฉ the vegetables and adds richness to the stuffing.
Chicken or Vegetable Broth: Feel free to use store bought or homemade.
Seasonings: I use ground sage, thyme, and pepper.
Eggs: The eggs help bind the cornbread and vegetables together. Be sure to beat them well before adding to the mixture so they combine evenly.
How to Make
Preheat the oven to 350ยฐF (175ยฐC) and grease a 9x13-inch baking dish.
In a large skillet, melt the butter over medium heat.
Add the diced onion and celery, cooking for about 5-7 minutes, until the vegetables are softened and fragrant.
While the vegetables cook, crumble the prepared Jiffy cornbread into a large mixing bowl.
Once the onions and celery are done, stir them into the crumbled cornbread along with the ground sage, thyme, and black pepper.
In a separate bowl, whisk the eggs and then add them to the cornbread mixture.
Pour in the chicken or vegetable broth and stir everything together until the mixture is well-moistened and evenly combined.
Spread the stuffing mixture into the prepared baking dish, smoothing it out into an even layer.
Bake for 25-30 minutes, or until the top is golden brown and slightly crispy.
Leftovers/Storage
Store leftover stuffing in an airtight container in the fridge for up to 4 days.
To reheat, cover with foil and warm in the oven at 350ยฐF for 15ish minutes or until heated through, or you can microwave individual servings.

F.A.Q's.
Why is my cornbread stuffing too dry?
It may need more broth. Add a little extra liquid to reach your desired moisture level before baking.
How do I keep the stuffing from getting too crispy on top?
If you prefer a softer top, cover the stuffing with foil during the first part of baking, then uncover it for the last 10 minutes.
