This simple recipe is perfect for busy weeknights or when you want a great tasting meal without much effort.

These chicken thighs go great with roasted vegetables, rice, or a fresh salad.

Ingredients

Chicken Thighs: Bone-in, skin-on thighs are best for this recipe as they stay juicy and tender during baking.

Plain Greek Yogurt: Choose full-fat Greek yogurt for a richer taste and creamier texture in the marinade.

Olive Oil: If you don’t have olive oil, avocado oil or another neutral oil can also be used.

Garlic: Fresh garlic gives the best flavor, but if you’re in a pinch, you can substitute with garlic powder.

Lemon Juice: If you don't have fresh lemon juice, you can use bottled lemon juice.

Seasonings: We use Greek oregano (can use regular oregano if needed), paprika, salt, and pepper.

How to Make

Preheat the oven to 400°F (200°C).

In a large bowl, mix together the Greek yogurt, olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper.

Stir everything until the mixture is smooth and well combined.

Add the chicken thighs to the bowl, making sure they are evenly coated with the marinade.

Cover the bowl and let the chicken marinate in the fridge for at least 30 minutes, or up to 4 hours if you want more flavor.

Once the chicken has marinated, arrange the thighs on a baking sheet lined with parchment paper.

Place them in the oven and bake for 35-40 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).

After removing the chicken from the oven, let it rest for a few minutes before serving.
