Easy Brookies

If you’re torn between baking brownies or cookies, these brookies are the best of both worlds.

Brownie batter and cookie dough are baked together in one pan, creating an irresistible dessert you won’t be able to get enough of.

They disappear fast and are perfect for parties or just a sweet treat.

Ingredients

Ingredients: oil, water, cookie mix, eggs, butter, and brownie mix.

Brownie mix: Use your favorite brand—fudgy mixes work best for a rich, chewy bottom layer.

Ingredients for brownie mix (usually oil, eggs, and water): Follow the box instructions exactly.

Cookie mix: Chocolate chip cookie mix is classic, but peanut butter or double chocolate also work well. Stick with a soft-baked style for the best results.

Ingredients for cookie mix (usually butter and eggs): Use softened butter, not melted and make sure eggs are at room temperature to mix in evenly.

How to Make

Preheat the oven to 350°F or the temperature listed on your brownie mix box.

Line a 9×13-inch baking pan with parchment paper for easy removal and cleanup.

Prepare the brownie batter in a large bowl according to the directions on the box.

Once mixed, spread the brownie batter evenly into the bottom of the prepared pan.

In a separate bowl, make the cookie dough following the instructions on your cookie mix package.

Once the dough is ready, drop spoonfuls of it over the brownie batter.

It’s fine if some brownie batter is still visible between the cookie dough portions.

Bake the brookies in the preheated oven for 30 to 35 minutes.

Check for doneness by inserting a toothpick into the brownie layer—it should come out with a few moist crumbs but no wet batter.

Tips & Tricks

Here’s some tips and tricks for making these brookies:

Slightly underbake: Pull the brookies out when the brownie layer still has a few moist crumbs for a gooey center.

Add mix-ins: Toss in chocolate chips, chopped nuts, or caramel bits to either layer if you want.

Chill before slicing: Cool completely and chill in the fridge for clean, neat bars when cutting.

Leftovers/Storage
