Cowboy Casserole
Cowboy casserole is a great comfort food casserole that always hits the spot.
It’s loaded with ground beef, beans, corn and a delicious sauce and topped with tater tots and cheese, making it both easy to make and filling.
This easy, all-in-one casserole is perfect for busy weeknights, potlucks, or anytime you need a meal to feed a crowd.
Ingredients

Ground beef: Make sure to drain the excess fat after browning.
Onion: A small yellow or white onion works best.
Garlic: Fresh garlic adds more flavor than garlic powder.
Diced tomatoes (undrained): The liquid helps make the beef mixture saucy.
Corn (drained): Canned or frozen corn both work. If using frozen, no need to thaw first—just stir it in.
Kidney or pinto beans (drained and rinsed): Either bean works great; choose whichever your family prefers.
Condensed cream of mushroom soup: You can swap it with cream of chicken if needed.
Sour cream: I use full-fat sour cream.
Seasonings: Use chili powder, salt, and pepper.
Frozen tater tots: No need to thaw—just place them frozen right on top. Arrange them in a single layer for even browning.
Shredded cheddar cheese: Pre-shredded cheese is fine, but freshly grated melts better.
Optional: chopped green onions or parsley: Add right before serving for best results.
How to Make
Preheat the oven to 375°F (190°C).
Grease a 9×13-inch baking dish and set it aside.
In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft.
Drain any excess grease from the pan.
Add the minced garlic and cook for 1 more minute, stirring often.
Stir in the diced tomatoes (with their juice), corn, beans, cream of mushroom soup, sour cream, chili powder, salt, and black pepper.



Mix everything together until well combined, then remove the skillet from the heat.
Spread the beef mixture evenly into the prepared baking dish.
Sprinkle 1 cup of the shredded cheddar cheese over the top of the beef mixture.
Arrange the frozen tater tots in a single, even layer across the top.



Bake the casserole uncovered for 35–40 minutes, or until the tater tots are golden and crisp.
Sprinkle the remaining ½ cup of cheese over the tater tots.
Return the casserole to the oven and bake for another 5–10 minutes, until the cheese is melted.

Top with chopped green onions or parsley if using.
Serve hot.

- 1 28-32 ounce bag frozen tater tots
- 1½ cups shredded cheddar cheese divided
- Optional: chopped green onions or parsley for garnish
