Corn casserole is an easy and delicious side dish made with sweet corn, creamed corn, and cornbread mix, perfect for any meal. Just mix everything together, bake, and enjoy this great side dish!

Corn Casserole

Corn casserole is a Southern traditional dish served at family gatherings and holiday dinners.

It is so easy to make, with only a handful of ingredients that you simply mix together and then pour into your casserole dish and bake.

Ingredients

Ingredients: Sour cream, cream style corn, yellow corn, eggs, jiffy corn bread mix, and butter.

Cream style corn: No need to drain this type of corn.

White or yellow sweet corn: Drain the can to remove any liquid.

Eggs, beaten: Room temperature eggs mix better with the other ingredients.

Butter: Melt for easier mixing.

Jiffy corn bread mix: The standard 8.5 oz. box is the perfect size.

Sour cream: Full-fat sour cream is what we used.

How to Make Corn Casserole

Preheat your oven to 350°F. Grease a casserole dish.

In a large bowl, combine all the ingredients for the corn casserole. Stir everything together until it's all mixed evenly.

Pour the mixed ingredients into your greased casserole dish. Spread it out so it forms an even layer.

Place the dish in your preheated oven and bake it for 40-45 minutes.

You'll know it's done when the top is lightly browned and a toothpick inserted into the center comes out clean.

How to Store Leftovers

If you end up with any leftovers, let them cool to room temperature, then transfer to an airtight container.

Store in the fridge for up to 3-4 days.

Ingredients

  • 15 ounces cream style corn 1 canq
  • 15 ounces white or yellow sweet corn 1 can, drained
  • 2 eggs beaten
  • 8 Tablespoons unsalted butter melted
  • 8.5 ounces Jiffy Corn Bread Mix
  • 8 ounces sour cream

Instructions

  • Preheat oven to 350F. Grease a casserole dish.
  • Mix all ingredients together.
    15 ounces cream style corn, 15 ounces white or yellow sweet corn, 2 eggs, 8 Tablespoons unsalted butter, 8.5 ounces Jiffy Corn Bread Mix, 8 ounces sour cream
  • Pour mixed corn casserole mix into prepared casserole dish and spread evenly.
  • Bake in preheated oven for 40-45 minutes or until lightly brown and toothpick inserted in the center comes out clean

Notes

If you have extras – it doesn’t do as well as leftovers. Much better eaten fresh because it seems to settle to the bottom instead of staying light and fluffy. If you’re cooking for less, make half a batch.
