This festive Christmas Poke Cake has two colorful layers filled with strawberry and lime Jello, topped with fluffy Cool Whip and sprinkles. It's the perfect fun and easy dessert for your holiday celebrations!

Christmas Poke Cake

If you're a fan of poke cakes, such as lemon poke cake or strawberry cheesecake poke cake, this Christmas poke is a fun twist.

It's a two layer cake with one layer being a red strawberry poke cake and the other layer being a green lime poke cake, covered in a Cool whip.

It's great for holiday gatherings or a fun seasonal dessert.

Ingredients for Christmas Poke Cake

Ingredients: Green Jell-O, Red Jell-O, Vegetable Oil, Cool Whip, Eggs, White cake mix, and water.

White cake mix: Prepared according to package directions and baked in two 8-inch round pans.

Boiling water: 2 cups, divided; this is used to dissolve the Jello.

Strawberry (red) Jello & lime (green) Jello: gives the red and green colors to the layers..

Cool Whip: make sure to pull this out to thaw when you start making the cake. It's used as a light and fluffy frosting.

Sprinkles: choose festive colors to match the Christmas theme.

How to Make Christmas Poke Cake

Start by baking the cakes following the directions on the package.

After they are done, use a fork or chopstick to poke holes all over each cake.

Next, take two small mixing bowls and divide the water evenly between them.

Add the strawberry Jello to one bowl and the lime Jello to the other, stirring each until the gelatin dissolves completely.

Pour the strawberry Jello mixture over one cake and the lime Jello mixture over the other cake.

Cover both cakes and place them in the fridge for 2-3 hours until they are fully chilled.

Once chilled, take one of the cakes and turn it out onto a serving platter.

Generously frost it with Cool Whip.

Then, carefully place the second cake on top and frost the entire cake with Cool Whip.

If you like, you can add sprinkles for decoration.

Finally, chill the cake for at least 1 hour before you slice and serve it.

Tips & Tricks to Make the Best Christmas Poke Cake

Here's some tips & tricks for making this poke cake:

Different Jello Flavors: If you want to change it up, try using cherry and lime. Or, if you don't care if it's holiday colors, choose your favorite types of Jello and flavor combos.

Decorate: Use holiday-themed sprinkles, crushed candy canes, or small gingerbread cookies as decorations.

Keep It Clean: If you want to keep your platter clean when adding the frosting, place strips of wax paper around your cake platter under the edges of the cake before frosting. Then, remove the strips after frosting.

Present Nicely: You can trim the top of your cakes with a knife before layering and frosting. This helps it stack more evenly.

Oven Racks: Make sure your oven racks are in your oven evenly/straight across. I've made a layer cake before where I put the racks in unevenly after cleaning the oven because I was in a hurry and then didn't check before baking. It made the cakes very uneven and not stack quite right.

How to Store Leftovers

Store any leftovers in an airtight container in the fridge or cover the cake with plastic wrap or foil. If you go the plastic wrap route, you can use toothpicks stuck in the cake to help keep the plastic wrap from touching it and ruining the frosting. Just make sure to remove the toothpicks before eating.

This cake can be kept in the fridge for up to 3-4 days.

Ingredients

Instructions

  • Divide the water between two small mixing bowls. Add the strawberry Jello to one bowl and the lime Jello to the other; stir until the gelatin is dissolved.
  • Pour the strawberry Jello over one of the cakes and the lime Jello over the second cake. Cover the cakes and refrigerate for 2-3 hours until fully chilled.
  • Turn one of the cakes out onto a serving platter. Frost generously with Cool Whip, then place the second cake on top. Frost the entire cake with the Cool Whip. Decorate with sprinkles if desired.
  • Chill the cake for at least 1 hour before serving.

Notes

I made the white cake using the instructions for egg whites instead of whole eggs.
9-inch cake pans can be used instead of 8-inch, but the cake layers will be shorter.
I greased the cake pans with non-stick cooking spray and placed a round piece of parchment paper in the bottom of each pan to ensure the cakes wouldn’t stick.
If the cakes won’t release from the pan after chilling, dip the bottom of the pans in a bowl of hot water to melt the gelatin in the bottom of the pan. This should allow the cake to release from the pan easier.
The leftover cake should be stored in the refrigerator and can be kept for up to a week. It can also be frozen for up to three months.
