This Christmas Cookie Cake is a holiday classic in the making! A delicious festive dessert thatโs perfect for family gatherings.
Christmas Cookie Cake
This is great for the candy lovers as it's full of chocolate chips and M&M's.
It's easy to switch this up and make this cookie cake any time of the year, just change out the Christmas colored M&M's for regular ones and the Christmas sprinkles to whatever your favorite colors are.
Ingredients
Unsalted butter: Make sure to pull this out of the fridge about 30-60 minutes before making to allow the butter to come to room temperature. Used in both the cookie and the frosting.
Brown sugar: Make sure to pack it tightly when measuring.
Granulated sugar: Works great with the brown sugar to get the perfect sweetness.
Eggs: Use large eggs and make sure to pull them out of the fridge at the same time as the butter to allow them to come to room temperature.
Vanilla extract: If possible use vanilla extract, you can use imitation vanilla in a pinch. Used in both the cookie and the frosting.
All-purpose flour: Measure it by spooning the flour into the cup and leveling it off to avoid using too much.
Salt
Baking soda
Semi-sweet chocolate chips: You can swap them for milk chocolate chocolate chips if you prefer.
Red and green M&Ms: You can mix in any color of M&Ms you like, but the red and green ones are perfect for the holidays!
Powdered sugar: Sift it if you want to avoid any lumps in the frosting.
Milk: Just a tablespoon of milk helps make the frosting smooth and easy to pipe.
Green gel food coloring: A little goes a long way, so start with a tiny amount and add more if needed.
Christmas sprinkles: Choose any kind you likeโred, green, or multicolored.
How to Make
Preheat the oven to 350ยฐF and line a springform pan with parchment paper. Set pan aside.
In a large mixing bowl, beat butter until smooth.
Add the brown sugar and granulated sugar, and cream them together for about 1-2 minutes, until the mixture is light and fluffy.
Add the eggs and vanilla extract, mix until everything is just combined.
In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
Be careful not to overmix.
Fold in the semi-sweet chocolate chips and M&Ms, making sure theyโre evenly distributed throughout the dough.
Transfer the cookie dough into the prepared springform pan, spreading it out evenly.
Bake for 20-25 minutes, or until the top begins to turn golden brown and a toothpick inserted into the center comes out clean.
Allow the cookie cake to cool completely in the pan.
While the cookie cake cools, make the frosting.
In a separate bowl, beat the remaining ยฝ cup of butter until smooth.
Gradually add the powdered sugar, vanilla extract, and milk, mixing until the frosting is smooth and creamy.
Add a few drops of green gel food coloring and mix until the frosting is evenly colored.
Once the cookie cake has cooled, remove it from the pan. Using a closed star piping tip, pipe the green frosting around the outside edge of the cookie cake.
Finish by sprinkling it with your choice of Christmas sprinkles for a festive touch.
Slice, serve, and enjoy!
Tips & Tricks
Use room temperature butter and eggs: This helps the dough mix more evenly and creates a smoother texture.
Donโt overmix the dough: Once you add the dry ingredients, mix just until combined to avoid a tough cookie cake.
Use a pizza cutter: For clean, easy slices, cut the cooled cookie cake with a pizza cutter instead of a knife.
Leftovers/Storage
