Chicken Pizzaiola
Chicken pizzaiola is a delicious Italian dish and is great when you want something Italian, but different than the normal spaghetti or lasagna.
It's not hard to make and the whole family will love it!
Ingredients for chicken pizzaiola
Boneless, skinless chicken breasts: You can use chicken thighs if preferred. Make sure to pound them to an even thickness.

How to Make chicken pizzaiola
Season the chicken breasts with salt and pepper on both sides.
Heat the olive oil in a large, oven-safe skillet over medium-high heat.
Place the chicken breasts in the skillet and cook them until they are browned on each side, which should take about 4-5 minutes per side.
Once they have a nice color, remove the chicken from the skillet and set it aside for later.
Using the same skillet, add the sliced onions and cook them for about 5 minutes until they are softened.
Then, add in the minced garlic and cook for another minute.
Pour in the crushed tomatoes and stir in the capers, oregano, basil, and red pepper flakes.
Let the sauce come to a simmer so all the flavors can blend together nicely.
Return the chicken breasts to the skillet, making sure to nestle them into the tomato sauce.
Turn the heat to low, cover the skillet, and let it simmer for about 20 minutes.
Sprinkle some mozzarella cheese over each chicken breast.
Place the skillet under your broiler just until the cheese has melted and turned a bit brown.
To finish, garnish the dish with fresh parsley and serve it with grated Parmesan cheese on top.

- 28 ounces crushed tomatoes
- 2 Tablespoons capers drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Β½ teaspoon red pepper flakes optional
- Β½ cup shredded mozzarella cheese
- ΒΌ cup chopped fresh parsley for garnish
- Fresh basil for garnish
- Grated Parmesan cheese for serving
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
