Barbecue Chicken Flatbread
If you’re looking for something quick and tasty, this BBQ flatbread is a great choice!
It’s perfect for using up leftover chicken or rotisserie chicken. Plus, kid friendly!
It’s quick to make and full of flavor, making it great for lunch or dinner.
Ingredients

Naan or flatbread: Both naan and flatbread work well for this recipe. If you’re using flatbread, choose one that’s slightly thicker to hold up well under the toppings.
Cooked, shredded or diced chicken: You can use leftover rotisserie chicken to save time, or cook chicken breasts ahead of time.
Barbecue sauce: Go for a barbecue sauce you love, whether it’s smoky, sweet, or tangy.
Shredded mozzarella cheese: Mozzarella melts beautifully and gives that perfect gooey texture. We use whole-milk mozzarella.
Diced red onion: If you want a milder flavor, you can soak the diced onion in cold water for a few minutes before adding it to the flatbread.
Chopped fresh cilantro: If you’re not a fan of cilantro, fresh parsley or green onions can be a great substitute.
Spices & Seasonings: We use garlic powder and smoked paprika.
How to Make
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a small bowl, mix the shredded chicken with ¼ cup of BBQ sauce, garlic powder, and smoked paprika.

Place the flatbreads on the baking sheet and spread the remaining BBQ sauce evenly over each one.
Sprinkle the flatbreads with shredded mozzarella cheese, then top with the seasoned chicken and diced red onion.

Bake for 10–12 minutes, or until the cheese is melted and the edges are golden brown.

Remove from the oven, sprinkle with chopped cilantro, and serve warm.
Tips & Tricks
Here’s some tips and tricks for making these BBQ Flatbread pizzas:
Use rotisserie chicken: Save time by using pre-cooked rotisserie chicken instead of cooking and shredding your own.
Try different flatbreads: Experiment with different flatbreads like pita or whole wheat.
Add extra toppings: Feel free to add extra toppings like sliced jalapeños, bell peppers, or olives.
Prep ahead: Assemble the flatbreads in advance, cover with plastic wrap, and refrigerate for up to 24 hours before baking.
Don’t overcook: Keep an eye on your flatbreads while baking; they cook quickly and can go from golden to burnt in a minute.
Leftovers/Storage

Store leftovers in an airtight container in the fridge for up to 3-4 days.
To freeze, wrap the flatbreads tightly in plastic wrap and aluminum foil, then place them in a freezer bag for up to 3 months.
To reheat, bake at 350°F for 8-10 minutes or microwave for 1-2 minutes until heated through.
